Vital Farms Egg Casserole

This one goes out to Vital Farms - happy chickens make happy eggs!


This recipe is great for Thanksgiving morning because you can prep it an hour before people want to eat & just toss it in the oven! You can use this as an outline and customize based on what your family likes. This is a great way to keep everyone fed and out of the kitchen while you are working on Thanksgiving dinner. This is equally great to make on Christmas morning!



You'll need

  • 9" x 13" casserole or baking dish

  • 10 Large eggs

  • 1/2 cup heavy cream or half and half

  • 2 cups frozen hash browns (don't need to thaw)

  • 1 cup chopped spinach

  • 1 jalapeno, diced

  • 1 cup chopped or crumbled cooked chicken breakfast sausage

  • 1 1/2 cups freshly grated white cheddar

  • salt & pepper to taste

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon chipotle powder (or 1 tablespoon of your favorite hot sauce)


Instructions:

  1. Preheat oven to 350 degrees F

  2. Use a stick of butter to lightly grease a casserole dish - just hold it and rub on the bottom and inside walls of the dish. Prep all of your ingredients

  3. Add eggs, cream, salt, pepper, onion powder, garlic powder, and chipotle powder to a large mixing bowl. Whisk together until smooth. Add in the cheese, spinach, chicken sausage + jalapeno - whisk again. It should be pretty thick.

  4. Spread the frozen hash browns across the bottom of your casserole dish. Pour the egg mix on top of the hash browns and use a spoon or fork to spread it out evenly.

  5. Bake uncovered for 50-60 minutes - use a toothpick to test the center before removing. The top should brown slightly.

  6. Let it cool for 5 minutes then serve!
