The base of this recipe is SO versatile. I am thrilled about all the potential here.
As you may have heard, I got an air fryer. I am also on a mission to eat healthier. Replacing regular toast with a slice of sweet potato is a fun and yummy way to do just that.
You can make this recipe even if you do not have an air fryer. Just use a toaster like you would toast regular bread!
This recipe is low calorie, energy boosting, and full of good nutrients. It also makes a great snack or meal any time of the day!
I topped mine with arugula, avocado, hard boiled eggs, radish, red chili flakes, and hot sauce.
You could switch it up here! Keep it classic with bacon egg and cheese. Make it sweet with almond butter, banana slices, and honey. Keep it interesting with whipped ricotta and apple slices. Seriously so many possibilities. Doesn’t have to be complicated, just avocado, salt and pepper would still be great.
You’ll need:
1 sweet potato
Baby arugula
Avocado
2 hard boiled eggs
2 medium radishes
Red chili flakes
Hot sauce
Lemon (zest)
Instructions:
Heat your potato in the microwave for 1 minute to make cutting it easier. Peel the potato if you want, I did not. Cut into thin slices (1/4 inch) long ways, think toast!
Air fry on 40 for 15 minutes. If you do not have an air fryer, I highly recommend getting one because it is a versatile and fun appliance. But in the meantime use a toaster (remember those?).
Top your toast first with arugula, then avocado (sliced or shaved or mashed, up to you). Next add some hard boiled egg slices topped with radish, lemon zest, hot sauce, and red chili flakes.
Some other fun toppings: dill, cucumber, feta.
