Sometimes you really want poke but sushi grade sashimi is like $$$. Luckily, smoked salmon is not $$$ but it is yummy!
Make this for lunch or dinner or even breakfast if you’re feeling it! Throw on a boiled egg, why not!
Because the smokiness adds so much of its own flavor, and because I'm on a health kick, I didn't add a lot else to this bowl. Honestly it doesn't need much else that's the beauty of it!
Smoked salmon is really easy to find in grocery stores. It’s usually by the seafood department! Shocking, I know.
You'll need (per person)
1/2 cup cooked brown rice
2-3 pieces smoked salmon
3 broccolini stalks
1 teaspoon sesame oil
1 teaspoon soy sauce
Diced green onion
Sliced radish
Sliced jalapeño
1 teaspoon sesame seeds or everything but the bagel seasoning
1 handful arugula
1 teaspoon fresh lemon juice
Instructions
Cook your brown rice, I've been buying frozen brown rice because its easy. Once its cooked, mix in sesame oil and soy sauce.
Sauté or steam the broccolini either in the microwave for 1 min with 2 tablespoons water or covered on the stove.
Dice/ prep your toppings
Mix arugula with lemon juice and let it sit
Add brown rice to your bowl, then arugula. Add cooked broccolini and smoked salmon. Then top with diced green onion, jalapeño slices, radish slices, and sesame seeds.
