Savory Sweet Potato Waffles

The first time I made these I absolutely did NOT get the ratios correct. Second time around - oh boy. They're good.



I made these for all the people like me who prefer a savory breakfast over a sweet one. There's no sugar in these! Sugar free waffles!

This recipe makes about 9 waffles. I use a small waffle iron (4in diameter, so obvi it'll make fewer waffles if you use a larger iron but good news - it's easy to scale this one up) Just google "dash mini waffle maker" and you'll find the one I have.


You'll need

  • 1 cup all purpose flour

  • 1 cup grated sweet potato

  • 1 egg

  • 2 teaspoons baking powder

  • 1/4 cup sour cream

  • 1 cup almond milk (or regular milk)

  • 1 shallot, small diced

  • 2 tablespoons diced chives

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon paprika


Instructions

  1. Add wet ingredients (egg, milk, sour cream) to a mixing bowl and whisk to combine.

  2. Add in sweet potato, chives, shallot, and spices, then mix.

  3. Slowly add in dry ingredients (flour and baking powder) and stir until just combined.

  4. Heat your waffle iron and spray with oil, I've been using avocado oil spray lately.

  5. My iron is small - 4 inches in diameter - so I add 1/4 cup batter to the bottom then close it and let cook 3 minutes. For larger irons just add more batter! The first one is always a tester and then you can adjust from there.


Top with chives, sour cream, boursin cheese, whatever your savory heart desires! BACON!
