I'm an eggs for breakfast kinda person. Savory > sweet any day.
Breakfast comes in so many forms: tacos, burritos, sandwiches, toasts, skillets... I love them all! Crêpes are a fun way to let everyone add what they want and feel involved. They're perfect for a nice family style breakfast and they're so fun.
You can buy a crêpe pan on amazon for like $20. I got one from World Market (my favorite place). Or you can just use a regular nonstick skillet! Crêpe pans are just more shallow, flatter, and wider than normal nonstick skillets.
I always assumed crêpes were difficult to make. They were such a fun treat, I only ever had them when my family went to beaver creek or I had one friend who's mom would make them for us.
Turns out they are not at all difficult to make! The ingredients are simple- eggs, water, milk, butter, flour. Depending on if I want them to be sweet or savory I'll add in either powdered sugar or salt/pepper.
They are easy to tear so you have to be gentle, and I ALWAYS mess up the first one. Its just tradition at this point.
These are my go to breakfast for impressing guests. I even kind of learned how to flip on in the pan which is a fun little trick.
The trick with crêpes is getting the batter thinly spread out over the surface of the pan. I add 1/3 cup to the center and then rotate the pan around in the air so the batter spreads out. There's also a little stick tool you can buy but my method works. It's extra helpful to let the pan cool for 30 seconds in between crêpes so the batter doesn't start cooking and stick to the center before being able to spread out.
Add your preferred fillings on one half of your crêpe then fold in half then fold into a quarter. You can eat them with a fork or try folding it into more of a cone shape and just eat with your hands.
I always add sriracha or cholula for some extra spice.
These were extra fun to make today because I finally got a Kitchenaid stand mixer. I've been working on HoneyIBaked for about 6 months now and my mom surprised me with a stand mixer and I nearly started crying. This is the first time in as long as I can remember that I've been 100% totally genuinely surprised. Someone in my family always spills the beans but this was the best surprise since we got my dog when I was 17.
This recipe makes about 8-10 crêpes. Double it if you have more people!
Ingredients
Crêpes
-2 large eggs
-1 cup milk (i use almond milk)
-¾ cup water
-3 tablespoons butter, melted
-1 cup all purpose flour
-1 teaspoon salt
-1 teaspoon white pepper
Other
-6 eggs, scrambled
-Bacon or ham
-2 shallots
-1 cup diced mushroom
-2 handfuls of spinach
-2 cups shredded white cheddar
Preparation
1. Add all wet ingredients to a mixing bowl and whisk.
2. Slowly add in flour, whisking the whole time (or mixer on stir)
3. Once flour is incorporated, either mix on high (stand mixer or hand mixer) or transfer to a blender and mix 30 seconds. There shouldn’t be any lumps and it should be pretty runny.
4. Let batter sit in the fridge for 20 minutes
5. While the batter is chilling, prepare all of the fillings- scramble eggs, sauté veggies, cook the ham/bacon, shred the cheese. Let eggs, ham and veggies sit in the oven on low heat to stay warm.
6. Using a non-stick pan, add in ⅓ cup of batter and then rotate pan so it covers the surface area and is just a thin layer
7. Cook 30 seconds on each side over medium heat. Repeat with the rest of the batter.
8. Serve family style, enjoy!
