Rotisserie Chicken and Hominy Soup

Quite obsessed with this one (and soup season in general tbh)



You'll need

  • 1 rotisserie chicken

  • 1 25 oz can of hominy

  • 2 celery stalks (diced)

  • 1 small yellow onion (sliced)

  • 1 bunch cilantro

  • 1 carton low sodium chicken broth

  • 2 garlic cloves

  • 1 teaspoon dried oregano

  • 1 can hatch chili peppers

  • 1/2 of a lime

  • 1 teaspoon honey


Instructions

  1. Remove the chicken breasts from the rotisserie chicken and shred

  2. Add a tablespoon of olive oil and sliced onion to a soup pot and cook over medium heat. After the onion has softened, add in celery and garlic and cook another 5 minutes.

  3. Add in oregano, hatch chili peppers, stir together. Then add in a carton of chicken broth and stir. Let this simmer for 10 minutes.

  4. Add in the chicken, a squeeze of lime, honey, and hominy. Refill the hominy can with water and add that in as well. Stir and simmer for 15 minutes.

  5. Before serving, stir in cilantro. Test it & add salt to taste.
