Pumpkin Spiced Apple Galette

It's finally fall and I could not be happier !!!!!!! This galette embodies fall flavors. It's easy to make and will impress all of your friends.



You can make two smaller galettes or one bigger galette. Up to you!


You'll need

  • 1 honeycrisp apple

  • 4 tablespoons pumpkin butter

  • 2 tablespoons butter

  • 1 teaspoon sugar

  • 1/2 teaspoon pumpkin pie spice


Crust:

  • 3/4 cup all purpose flour

  • 1/4 cup almond flour

  • 6 tablespoons butter

  • 1 tablespoon honey

  • 3 tablespoons heavy cream


Optional: vanilla bean ice cream !


Instructions:

  1. Start by prepping your ingredients. First you need to put the butter in the freezer. Peel the apple and cut into 1/8 inch thick slices.

  2. Preheat oven to 375 degrees F.

  3. To make the dough, add all purpose and almond flour to a bowl, whisk together. Remove butter from the freezer and grate using a medium sized grater. Add the grated butter into the flour and toss to coat. Use your fingers to work the butter into the flour. Next add the honey and heavy cream. Form the dough into a ball and then begin to knead. As you knead the dough, the butter will soften and help it hold shape. Knead for 2-3 minutes or until the dough is all one texture and holding together well.

  4. Cut the dough in half and roll out separately to about 1/4 inch thickness. Spread pumpkin butter on each, saving about an inch of space around the edge.

  5. Place apple slices on top of the pumpkin butter, it helps to layer/ half stack them but get creative! Fold in the edges like you see in the pictures.

  6. Melt 2 tablespoons of butter in the microwave (20 ish seconds) and stir in a teaspoon of sugar. Use a brush to brush it over the whole galette, apple + crust! Sprinkle with pumpkin pie spice.

  7. Cover a baking sheet with parchment paper. Place the galettes on the parchment paper and bake for 35 minutes, rotating after 20 minutes. Remove from oven and enjoy right away! or make them ahead of time and reheat at 250 for 5-10 minutes ahead of eating. Top with a scoop of vanilla ice cream if you're feeling it!
