You know those Starbucks sous vide egg bites that everyone is obsessed with? I know its not just me!! Well these are like that but a little more nutritious and you can easily make them at home.
They’re pretty quick and low effort + super customizable. You can switch up the cheese, the hot sauce, the filler ingredients. You can make them in a different kind of pepper (the ratios will be off but good for you for experimenting). ANYWAYS!!! Enjoy.
Time: 20 minutes
Serves: 1 lucky person
You’ll need
2 poblano peppers
2 large eggs
1 oz cheddar cheese
1 green onion
1 tablespoon heavy cream
1 teaspoon hot sauce (use your favorite)
1/2 teaspoon paprika (approx, just dash it in there a couple times)
Salt, pepper to taste
Optional additions: black beans, cooked sausage, diced Canadian bacon, hashbrowns
Instructions
Cut the stem and the bottom tip off of your poblano peppers. Remove any seeds and ribbing and cut into to two rings. If it’s a really large pepper you can cut into three rings but you want them to be somewhere between 1 and 2 inches thick.
Scramble together your eggs + all other ingredients.
Heat a skillet over medium high heat and place the poblano rings in, thinner side down. Let them sit for about 2-3 minutes. Scoop in the scrambled egg mix to each pepper. If its spilling out through the bottom, pause because your pan isn’t hot enough. Fill up each ring. If they’re not completely full you can either add another egg or add in a filler like black beans or diced Canadian bacon.
Let the bottom of the eggs set for a couple minutes then pour in about 1/3 cup of water and cover the pan with a lid to let it all steam. Turn the heat to medium.
Steam cook for about 10 minutes, check to see if the eggs have set. If they haven’t, give them another 5 minutes. Once they’re set, remove from the pan and enjoy!
