Peach and Burrata Summer Salad

The prettiest summer salad there ever was!! So so fresh and perfect for warm weather.





You'll need

  • 2-3 peaches

  • 1-2 persian cucumbers (the baby ones)

  • 2 medium sized burrata balls

  • fresh basil leaves

  • avocado oil (or olive)

  • fresh ground black pepper, to taste

  • flakey sea salt, optional

  • prosciutto and greens on the side

  • balsamic vinegar or balsamic glaze


Instructions

  1. Cut the cucumbers into 1/4 inch slices. Cut the peaches into slices, you can try pitting and cutting them like an avocado but not all peach seeds release easily. Put the cucumber slices down on a plate and spread them out, then add the peach slices.

  2. Break the burrata balls into smaller pieces and lay them out across the plate. Then either cut basil into small pieces or tear it or leave it whole and sprinkle it across the plate.

  3. Drizzle with avocado oil and then add pepper and flakey sea salt (if using)

  4. I like to serve it with fresh baby greens and prosciutto on the side but you can certainly incorporate them straight into the salad. I also like to drizzle some balsamic glaze on at the end!
