My favorite dressing!! If it’s not hatch chile season you can easily use a jalapeño or Anaheim pepper instead
You’ll need:
1 hatch chile
1/2 cup mayo
1/2 cup sour cream
1/4 cup buttermilk
1/2 cup cilantro
1/4 cup dill
1/4 cup parsley
2 tablespoons diced chives
2 tablespoons dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
salt + pepper to taste (about 1/2 teaspoon each)
Instructions
Cut the hatch chile in half, remove the stem and grill or roast in the oven at 400 degrees for 20 minutes. I grilled mine on a grill pan on my stove over medium high heat for 20 minutes
Cut the hatch chile into thirds. Add everything to a blender or food processor and blend until well mixed
Serve on a salad or as a dip!
