Hatch Chile Ranch Dressing

My favorite dressing!! If it’s not hatch chile season you can easily use a jalapeño or Anaheim pepper instead



You’ll need:

  • 1 hatch chile

  • 1/2 cup mayo

  • 1/2 cup sour cream

  • 1/4 cup buttermilk

  • 1/2 cup cilantro

  • 1/4 cup dill

  • 1/4 cup parsley

  • 2 tablespoons diced chives

  • 2 tablespoons dijon mustard

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest

  • salt + pepper to taste (about 1/2 teaspoon each)


Instructions

  1. Cut the hatch chile in half, remove the stem and grill or roast in the oven at 400 degrees for 20 minutes. I grilled mine on a grill pan on my stove over medium high heat for 20 minutes

  2. Cut the hatch chile into thirds. Add everything to a blender or food processor and blend until well mixed

  3. Serve on a salad or as a dip!
