These cookies make me rethink my opinion on chocolate chip cookies which is that they're boring. Before you get offended go back and re-read the beginning of that sentence. I re-thought it!!
This past week I've been texting out of town friends asking what flavor of cookies they would ~hypothetically~ like to receive in the mail. Not at all suspicious coming from a self proclaimed food blogger! Yes I'm mailing them cookies. Anyways, think of all the options!! So many options! they could come up with anything but instead most of them said choco chip! I was let down, disheartened. My own brother requested them too. SO I accepted the challenge - because really it is a challenge to surprise people or stand out in the field of chocolate chip cookies, there are already so many of them! I think these do stand out. My roommate described them as a sugar cookie with puddles of chocolate. I like that!
You'll need:
1 stick butter, room temp (1/2 cup, 8 tablespoons)
1 cup granulated sugar
1 egg
1 teaspoon vanilla
2 tablespoons brown sugar
1 2/3 cup flour
1/4 tablespoon baking soda
1/4 tablespoon baking powder
1 bar dark chocolate (70% cocoa works well)
Instructions:
Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
Using a stand mixer or a large mixing bowl, whip together the butter, vanilla, and sugar until fluffy, add in the egg and beat until even fluffier. Add brown sugar and beat until combined. Scrape down the sides of the bowl.
Sift dry ingredients (flour, baking soda, baking powder) into a bowl and then slowly add to the dry ingredients, mixing the whole time. Add about a half of the flour or less at a time.
Using a knife, cut/ break the chocolate bar into messy chunks, add into the cookie dough and fold until mixed through evenly.
Using a tablespoon or icecream scoop, scoop 2 tablespoons of dough at a time and form into round balls. Place 9 on a baking sheet at a time - if you want 12 cookies then make smaller balls so they'l fit - these do expand! Place onto your baking sheet.
Bake at 350 for 15-17 minutes. Turn the baking sheet 180 degrees half way in case there is an uneven hot spot in your oven (ie: my oven cooks hotter in the back).
