Chili Citrus Flank Steak Tacos w/ Mango Pico

Ya girl loves tacos.


The great thing about these tacos? If you're just one person (like me) and still cooking for way more than one person (like me!) then you can use these leftovers in other equally tasty and fun ways like a big steak salad or a rice bowl or a burrito. I'm hungry again wow.




My mom has a great flank steak recipe, it's one of her staple sure-to-please-the-whole-family dinners (she also has a great grill but we won't get into the perils of apartment life right now). I've been trying to come up with my own flank steak recipe that has the same effect.




You'll need:

  • 1lb flank steak

  • 12 tortillas


Mango Pico

  • 1/2 cup diced mango

  • 1/2 cup diced persian cucumber

  • 1 avocado, pitted and diced

  • 1 lime, juice

  • 1/4 cup diced cilantro

  • 1 jalapeño diced

  • 1/4 cup yellow onion, diced


Marinade

  • 2 tablespoons avocado oil

  • 2 limes, juiced

  • 1 teaspoon red pepper flakes (or more!)

  • 1 teaspoon ground cumin

  • 2 tablespoons fresh squeezed orange juice

  • 1/2 tablespoon brown sugar

  • 2 cloves garlic, smashed and cut in half

  • 1 tablespoon soy sauce


Cilantro Crema

  • 1/2 cup light sour cream

  • 1 lime, juice + zest

  • 1/2 cup diced cilantro

  • salt + pepper to taste

  • 1 teaspoon sriracha if you're feeling spicy


Instructions:

  1. Add all marinade ingredients to a plastic bag (gallon sized) & mix them together. Then add in the steak, remove as much air as possible and let sit for at least 30 minutes up to overnight. I like to start mine in the morning and let sit until ready to cook for dinner.

  2. Preheat oven to 350

  3. Add all mango pico ingredients (chopped) to a bowl and mix - refrigerate until ready to assemble your tacos, this can be done ahead of time!

  4. In a large cast iron skillet, heat two tablespoons avocado oil over medium+ heat until shimmery. Add in your steak and half the marinade. Let sit for three minutes, flip and let sit another three minutes, add the remainder of the marinade.

  5. Transfer to the oven and cook 12 minutes. Remove. Let sit for 15 minutes then cut into thin slices against the grain.

  6. Assemble tacos starting with tortillas, a shmear of cilantro crema, two slices of steak, topped off with mango pico.


Simple but packs BIG flavor. ENJOY!
