Chai Spiced Chocolate Chunk Banana Bread

With dark chocolate chunks!!


I'm not someone who goes by a nickname, Anna is easy enough. But I did get called Anna Banana a lot when I was younger and I have dressed up as a banana for halloween at least twice.



I love love LOOOOVE banana bread, this was my first time making it myself! Pro tip: gotta prepare by buying bananas ahead of time. Or just use this recipe for when you wait too long to eat bananas you already had.


A lot of banana bread has walnuts - I am personally not a fan but if you are then go ahead and throw a handful in! just roughly chop them first.




You'll need

  • 4 overly ripe bananas

  • 1 cup apple sauce

  • 1.5 cups flour

  • 1/4 cup honey

  • 2 eggs

  • 1 teaspoon vanilla

  • 1.5 teaspoons baking soda

  • 1 teaspoon chai spices (yum!)

  • Pinch of kosher salt

  • 1 cup dark chocolate chunks

  • Bonus: 1 teaspoon almond extract


Instructions:

  1. Preheat your oven to 350 degrees and grease a loaf pan (9x5 ish)

  2. Peel the bananas and mash in a mixing bowl. Add in apple sauce, eggs, vanilla, honey (+almond extract) and stir to mix.

  3. Sift in flour, then add baking soda, salt, and chai spices. Fold and mix until just combined.

  4. Pour batter into your loaf pan and bake 50-60 minutes. Remove and serve warm for best results! Otherwise, let it sit before cutting. Top with cinnamon honey butter for an extra level of goodness.


Cinnamon honey butter:

2 tablespoons room temp butter

1 tablespoon honey

1/2 teaspoon cinnamon

-mix!
