The perfect Sunday morning breakfast in bed kinda meal. I made this because I knew it would be pretty. Typically I like savory foods for breakfast but this made me question that! I like that they're not overly soggy and the banana adds a perfect and mild sweetness.
Yields: 2-4 servings
Time: 20 minutes
You'll need
4-6 slices brioche
1 large egg
1 large, soft banana
1/3 cup heavy cream
1 teaspoon vanilla extract
1 teaspoon sugar
1/2 teaspoon cinnamon * see note at end
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1-2 tablespoons of butter (for the skillet)
Toppings:
Maple syrup
Banana slices
Strawberries
cocoa powder
Instructions:
Add egg, banana, cream, sugar + spices to a blender or food processor and puree until completely smooth.
Heat your skillet or griddle to medium high heat
Pour the banana mix into a dish or pan (something with walls) and soak two slices of bread for 15 seconds on each side. Add butter to the skillet or griddle and then cook each slice until golden brown (about 3 minutes on each side) Repeat until bread / banana mix is gone or you have as many slices as you want)
Top with cocoa powder, banana, strawberry, and maple syrup. Serve while hot and enjoy!!
Notes:
If you don't have cinnamon, cloves, nutmeg, AND cardamom you can replace these with two teaspoons of either pumpkin pie spice or chai spice!
